with somethin like this... you can be in a sense sol... mac doesnt make things for compatibility in a sense of working with previous OS's, not like Windows which is just updates after updates really. The OS of the iPod is the one thing you will likely not be able to roll back, unlike iTunes which you can just get previous versions of. MacOS has a substantial amount more than just and update what a new OS comes out(10.3 vs 10.4 vs 10.5 ya know). You very well may need to get Tiger if you want this to work. plus, worst case scenario, 256MB of RAM cant be more than $30 im sure.
Your two choices I'd say right now are to get 256MB of RAM for 10.4 Tiger, or get an iPod recovery software and load your 80GB iPod with an older iPod system OS.
