Just in case if we do make a modded server, here are a few ideas: Industrial Revolution; Temperature; Thirst; More Animals; Flint Tools; Realisticraft; and RLCraft.

Hey Colton! We're looking to bring up the new Vanilla server today, and usually try to alternate refreshes of modded and vanilla servers with each other to avoid pulling players two directions at once. Hopefully in this case, it will also allow more mod makers to bring their mods up to date with the latest versions, so we can enjoy them without having to roll back the version too far by the time we're looking at our next mod server.

We don't tend to go for mods that are meant to make the game hardcore survival mode, though that is certainly a new direction we could look into if people are interested. There does look to be the basics of a pretty decent pack more in our usual vein that exists for 1.16, or maybe even 1.16.5, but some of the big ones are still back as far as 1.12.2. We'll have to see what's available when the time comes!

Create Together looks like a decent minimalist modpack that keeps a vanilla feel. Mid and I haven't tried it yet, but it's on my list.
