There's a reason why the main mode of multiplayer in this game is called Survival MultiPlayer (SMP) - survival is the main focus of the game, and in the future it's going to be the survival and adventure aspects that are going to gain the most attention, as that is what entices players back to the game. Right now, a decent chunk of people aren't playing anymore and waiting for there to be actual things to do in the game aside from building things. If they ignore that demographic, they're going to lose a large chunk of playerbase. For people who build, they're reinventing Creative, but as a general rule everything you need to build stuff is already in the game, and no more additions need to be done. Mob grinders right now do pose a big threat for adventure because you can get near-infinite arrows from them, which would make adventuring considerably easier.
The decision to make it so you need to kill them is honestly a smart one, and bear in mind that it also leads to more interesting opportunities with bosses down the road - if killing something via lava or causing them to fall makes it so that you don't get the loot, that would mean you need to put in serious effort to make sure you land the final blow on an enemy.
tl;dr - Adventuring is a larger demographic of players, so game changes will be decided in favour of those people as opposed to builders.
