I guess the main reason for us is our kids. It lets them chat with only people nearby in game or in an in-game group. This can save the ears of people who hop on the channel. It also prevents us from putting discord on their laptops. Beyond personal reasons, it provides proximity and private voice chat for only those logged into the server.
Yes, you drop them in the datapacks folder within the world folder and restart the server, then they apply.

I ran a Geyser server at home before in the proxy configuration. I'm seeing now they have a direct plugin as well.
