Indeed, there is no reason to destroy them. If you want mossy or cracked stone brick, do the following:

Cook cobble into smooth stone.
Craft smooth stone into stone brick.
Craft stone brick stairs.
Place the stairs, and depending on the direction the stairs are facing when you mine them you'll get cracked, mossy, or regular stone bricks back.
