I've read that book before. It was a bit dry and seemed to be slightly influenced by the Irish, although the author is English.

Well the potato has had a huge influence on the Irish, and by the very nature of a lack of the starchy tuber had an incredible impact on the United States and other European countries indirectly.

Considering it's an American food originally, it has had more influence on America than many things! It's associated with Ireland and the UK, but it came from this hemisphere. Same for tomatoes - unknown in Italy or elsewhere until brought back from the Americas. Also corn, chocolate, peanuts, and many other notable foodstuffs. The early Americas may not have had what Europe considered advanced civilization, but it certainly had a shocking number of the foods that ended up sustaining the world.
